a bottle and a glass of orange juice

Ingredients

• 100 grams of pasta

• 125 grams of minced turkey (substitute for your fave filling)

• 100 ml of oat milk (any substitute will do, including water)• 3 medium tomatoes

• 1 tsp Basil

• 1 tsp Sage (thyme or oregano will do)

• 1 tsp Paprika

• 1 tsp Mustard

• Salt (optional)

• Pepper (to taste)

• Jalapeño chilli seasoning mix (to taste)

• Cheese (optional, any will do, mozzarella used)

a tray of food

Method

1️⃣ Add the seasonings, mustard, and oat milk into a small bowl, mix, and let sit while preparing the tomatoes.

2️⃣ Dice the tomatoes into chunks, peel or leave as is according to preference.

3️⃣ Heat pan to medium heat and add around 100ml of water and the turkey mince, cook all the way through, then add the liquid mixture into the pan and let heat up gently. Add the tomatoes and bring to a simmer.

4️⃣ Cook the pasta according to the instructions on the package, and remember to salt your water so the pasta doesn’t stick to itself.

5️⃣ Strain but leave a bit of the water, add into the sauce, and then cook it for another five minutes or until the liquid has reduced (becomes thicker).

Enjoy! (bonus points if you remember you have some form of cheese in the fridge!)
